Olivier Savary and wife Francine have been making Chablis since 1984, initially selling off most of the fruit in bulk. By 1990 they had started bottling their own wine from what's now 17 hectares of vines and had made quite an impression on none other than Jean-Marie Raveneau who introduced Olivier to Kermit Lynch who's been importing the wine ever since. Sons Maxime and Mathieu have since joined the business and now ensure a bright future for the domaine. These are classically styled, traditional Chablis made the old way with natural farming for low yields and fermentation and aging in stainless steel and neutral oak vessels. This old vine AC Chablis isn't just one of the best wines in their cellar, it's the best value there is in Chablis and they seem to nail it every year.
From 40+ year old vines on south facing slopes, this is the densely mineral Chablis that can't be mistaken for anything else. Fermented and aged in mainly stainless steel with about 20% of the wine aged in large old neutral wood demi muids. White flowers, tart green apple and crushed oyster shell on the nose with orchard fruits and telltale hints of lemon curd on the palate. Long, firm mineral finish. Just astounding quality for the money. Not much made or exported and always goes quickly.
